Popsicles?! For Christmas?! YES. Any day is a good day for a popsicle, especially when they're loaded with nothing but healthy fruit and yogurt. My little Maggie had FIVE in a row, and you know what? These Christmas pops are simple to make! You need a red fruit (we used frozen strawberries), white yogurt (we used vanilla), a green fruit (we used kiwi), a little blendery thing, and a popsicle mold (we used this super cute mini pop mold from Zoku which I LOVE).
Whir up your fruit. I used 3 kiwis and about 10 medium-sized strawberries, and it made enough puree to fill this particular mold twice.
Your popsicle mold may need more or less. I thawed my strawberries in the microwave so that they would blend nicely. I didn't add any additional sweetner, but you could certainly add some sugar or honey if you prefer.
Fill up your popsicle molds using layers of each color. The consistency of the three ingredients is very different, so they won't mix together in the mold.
Put the mold in the freezer for several hours, and then you have a healthy holiday treat for your kids that you won't feel guilty about!
